Ingredients

Wheat semolina, dates, clarified butter, pistachio. Named, sourced, and unchanged where changing them would change the product.

The mould

Maamoul is pressed into carved moulds that give each piece its distinctive pattern. The crimp on the top of every piece comes from a carved mould, and it is the reason the carved mould gives each piece its distinctive pattern.

Temper

Chocolate at true temper — a matt-satin sheen and a clean snap. Held at 18 °C through storage and transport.
